Ever get stuck in a rut with what to put on the table? Unless you are a chef by trade or heart, this has to ring true with the majority of us. Well say hello to the Frittata? or Egg Pizza as my kiddos would call it. What is a Frittata? Very simply a crustless quiche. I actually stumbled upon making this little very easy dish. I almost always have eggs and I wanted something different for breakfast. I grow bored of the same thing and thought, “I wonder what eggs would taste like baked?”. Much to my surprise when I went searching for baked eggs I stumbled upon the Frittata. Nothing new to many, but to me, it was a wonderful surprise! Even better they are super easy and you can use leftovers or whatever fits your fancy.
I like to push green whenever possible. There is green in almost ever dinner I make, but breakfast can be tricky. My frittata is an excellent way for me to add some green to breakfast.
Frittata (Egg Pizza?)
- 10-12 Eggs (local free range if possible)
- butter
- mushrooms
- handful of kale
- onions
- cheese (optional)
- salt and pepper to taste
Preheat oven to 375. Heat butter in large cast iron skillet. Add mushrooms, onions, and chopped kale or whatever vegetables you like.
Sauté vegetables until tender.
Remove from heat. Scramble eggs and pour over vegetables. Salt and pepper to taste, Add cheese if desired. Bake for 30 minutes. And look what you get…
